Palate: Lemon and lime energy laced over granny smith apple, spice and grapefruit pithe.
Handpicked then whole bunch pressed, settled in tank overnight before spending three months in barrel on fine lees.
Charmat with zero dosage to preserve the beautiful nuances of fennel, mountain herbs and fresh berries.
Varieties: 1/3 Pinot Noir, 1/3 Pinot Gris, 1/3 Chardonnay
